Herb-packed rub perfect for grilling poultry
- 1 tbsp thyme
- 1 tsp rosemary

- Trim off any fat and cut into bite size pieces
- Throw in a bowl with:

- 1 Tbsp olive oil
- 2 cans chicken stock
- 5-6 cloves garlic, halved
- 5 golden potatoes, quartered
- 5 red potatoes, quartered
- 2 yellow onions, quartered
- 5-7 carrots, roughly chopped
- 2 packs McCormick® brown gravy mix
- Cut roast into even sized pieces and coat with rub
- Set Instant Pot to sauté (you did buy an Instant Pot with the sauté feature, didn't you?)
- Add 1 Tbsp of olive oil and sear each side of the beef pieces
- Remove beef. Turn off Instant Pot. Add 1 can of chicken stock and deglaze
- Add beef, garlic, potatoes, onions, and carrots. Add remaining can of chicken stock
- Cover and set Instant Pot to manual high pressure for 105 minutes
- Manually vent the Instant Pot when the timer ends
- Combine 2 cups of the cooking liquid and the two packs of McCormick brown gravy mix in a sauce pan on high heat. Stir until thickened
- Served meat and veggies with gravy. Pass all praise to the Trash Man
